Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main savory flavor of the sauce.
Butter rolled in flour
Thickens the liquid and adds richness and a smooth body.
Milk or cream
Adds richness and softens the sauce's flavor.
Lemon juice
Adds acidity that brightens the rich, savory sauce.

The step that matters

Adding the butter rolled in flour. Flour must be fully incorporated and the sauce brought to a boil so the starch cooks and thickens smoothly without lumps or a raw floury taste.

Swap the mace

How well each one fits the dish's main ingredients (oyster, lemon, butter, flour, milk):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Cinnamonfits better
  4. Macethe original
