Shared aroma: acetic acid (sour, vinegar).

Egg and vinegar barely smell alike, yet cooks put them together in 12,922 recipes: they work on texture and structure more than aroma.

What each ingredient does

Beets
Provide the main earthy sweetness and vivid color that spreads into the pickling liquid.
Eggs
Add creamy richness and a mild flavor that soaks up the tangy pickling liquid.
Vinegar
Adds sharp acidity that flavors the beets and keeps the pickle tart.

The step that matters

Boil the beets until tender but not soft. Beets cooked past tender turn mushy and crumble when sliced, while undercooked beets stay firm and resist absorbing the vinegar flavor.
