What each ingredient does

Eggs
Set into the structure of the omelette as they cook, holding the filling together.
Grated ham
Adds savory flavor and salt-rich taste to the eggs.
Butter
Adds richness and helps the bottom of the omelette brown in the pan.

The step that matters

Pour the egg and ham mixture into the skillet and fry until the bottom is brown. Eggs set quickly over heat, so cooking too hot or too long can make the omelette tough and dry. Browning the bottom adds flavor, but the top should still be moist when folding.
