Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Forms the bulk of the dish and becomes tender during the long gentle stew.
Sweetbreads
Provide a soft, delicate texture that contrasts with the stewed meat.
Eggs
Thicken the gravy as they set gently when stirred in over heat.
Brown flour
Thickens the gravy so it coats the meat.
Salt pork
Adds fat and savoury richness to the stew as it renders into the gravy.

The step that matters

Stirring in the beaten eggs. Egg proteins set when heated, so the gravy can curdle or turn grainy if it boils hard after the eggs go in. Keep the heat low and stir steadily.

Swap the peas

How well each one fits the dish's main ingredients (mutton, lamb, egg, pork, onion, pepper, parsley):

  1. Beansfits better
  2. Sesamefits about as well
