Sweet Crackers

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the lard and sugar together until well combined.

  3. Add the beaten eggs, sweet milk, baking ammonia, and oil of lemon to the mixture.

  4. Stir until a stiff dough forms.

Shape and bake

  1. Roll the dough thin like pie crust and cut into squares.

  2. Place the squares on a baking sheet and allow to sit for a few hours to let the ammonia evaporate.

  3. Bake in the preheated oven until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lard
Provides fat that makes the crackers short and tender.
Eggs
Bind the dough and add structure and richness.
Baking ammonia
Leavens the dough as it breaks down, giving a light, crisp texture.
Sugar
Adds sweetness and helps the crackers brown lightly in the oven.

The step that matters

Letting the squares rest before baking. Resting gives the baking ammonia time to release its gas and evaporate; baking too soon can leave a bitter, harsh taste and an uneven texture.
