Why it works: Asparagus and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 1,968 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the asparagus

  1. Cut the asparagus into 1‑inch pieces, removing all hard parts.

  2. Boil the asparagus in salted water until tender, then drain.

Assemble and bake

  1. Place the asparagus in a baking dish and pour the drawn butter over it.

  2. Break the eggs on top of the asparagus and place a small piece of butter on each egg.

  3. Sprinkle with salt and pepper.

  4. Bake in a 400°F (200°C) oven until the eggs are firm.

  5. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Asparagus
Forms the bed of vegetable that the eggs rest on, adding body and a green flavour.
Drawn butter
Adds richness and moisture, coating the asparagus and keeping it from drying in the oven.
Eggs
Set with heat to form the main structure and soft-firm texture of the dish.
Butter
Melts over the eggs, adding fat for richness and gentle browning.

The step that matters

Baking until the eggs are firm. Egg proteins set as they heat, so pulling the dish too early leaves runny whites, while overbaking makes the yolks chalky and rubbery. Watch for set whites with yolks still soft.

Swap the asparagus

How well each one fits the dish's main ingredients (butter, egg, pepper):

  1. Capsicumfits about as well
  2. Asparagusthe original
  3. Chivefits about as well
  4. Potatofits about as well

Fit is the average pairing score against butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
