Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Beat the egg whites until very stiff.

Make the batter

  1. In a separate bowl, mix the egg yolks with parsley, a little salt, and pepper.

  2. Gently stir the dried herbs into the yolk mixture.

  3. Fold the beaten egg whites into the yolk mixture carefully.

Cook and serve

  1. Pour the mixture into a greased skillet and cook as you would a plain omelet.

  2. Fold the omelet in half and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift and a light texture, while yolks add richness and structure.
Butter
Adds richness and flavour, and helps the omelet brown in the pan.
Parsley
Adds fresh, green aroma and flavour to the yolk mixture.

The step that matters

Folding the beaten egg whites into the yolk mixture. Whipped egg whites hold air that gives the omelet its lift. Stirring or overmixing knocks out this air, so the result turns dense and flat instead of light and puffed.

Swap the onion

How well each one fits the dish's main ingredients (egg, butter, parsley, pepper):

  1. Shallotfits better
