Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Old-fashioned Apple Pie

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Prepare a light pie crust and line a deep pie tin with it.

  3. Wet the edge of the crust with cold water and place a thin strip around the edge to seal in the juice.

  4. Pare, core, and slice the tart apples, then layer them in the pie dish.

  5. Sprinkle plenty of sugar over the apples and add any preferred spices like cinnamon, ground cloves, and grated lemon rind with lemon juice.

  6. If the apples are not juicy enough, boil the peelings and cores in a little sugar and flavoring, strain, and add the liquid to the apples.

  7. Bake the pie in the preheated oven until golden brown.
