Leroy's Birthday Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the eggs, sugar, butter, sweet milk, baking powder, nutmeg, and enough flour to form a dough that is just stiff enough to run.

  3. Bake the mixture in layers.

Make the filling

  1. For the filling, dissolve the corn-starch in a small amount of the boiling milk.

  2. Add the butter and sugar to the dissolved corn-starch, then pour in the remaining boiling milk while stirring briskly until partially cool.

  3. Stir in the orange extract and the beaten egg yolk.

Assemble and serve

  1. Fill between the layers with the filling and ice the top.

  2. Serve while warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure to the layers as they set in the oven.
Flour
Forms the dough-like batter that gives the cake its main structure.
Baking powder
Releases gas in the heat so the layers rise and become lighter.
Corn-starch
Thickens the boiling milk into a filling that holds its shape between the layers.
Egg yolk
Enriches the filling and helps it set to a creamy texture as it cools.

The step that matters

Stirring the filling while it cooks. Cornstarch must be fully dissolved and stirred briskly into the hot milk; otherwise it can clump or fail to thicken evenly, leaving a lumpy filling.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, butter, milk, nutmeg, flour, corn):

  1. Vanillafits better
  2. Raisinfits better
  3. Coconutfits better
  4. Orangethe original

Fit is the average pairing score against egg, sugar, butter, milk, nutmeg, flour, corn. Candidates are from the same food group and used in at least 100 recipes.
