What each ingredient does

Pineapple
Provides the main fruit flavour and, once stewed and sieved, the smooth body of the cream.
Whipped cream
Adds fat and air, giving the filling a light, creamy texture.
Lady's fingers
Form the sponge structure that holds the walls of the charlotte.
White sugar
Sweetens the pineapple and helps it stew to a soft, spoonable mixture.

The step that matters

Cooling the sieved mixture fully before folding in the cream. Whipped cream loses its air and can collapse or turn grainy if folded into a warm mixture. Chilling the pineapple purée first keeps the filling light and thick enough to hold its shape in the glasses.
