Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main fruit flavor and much of the liquid base.
Sugar
Sweetens the dessert and keeps it softer when frozen.
Gelatin
Gives the frozen mixture a firm, smooth set with a clean body.
Orange juice
Adds bright citrus aroma, sweetness, and extra liquid.
Lemon juice
Adds acidity that sharpens and brightens the fruit flavor.

The step that matters

Mixing the dissolved gelatin into the fruit. Gelatin sets by forming a network once it cools. If it is not mixed in thoroughly, it can form clumps or streaks, so the frozen sherbet will have uneven firmness and texture.
