What each ingredient does

Iceland moss
Its natural gums thicken the liquid as it simmers, setting it into a jelly.
Egg white
As it heats, it binds fine particles so the jelly strains clear.
Sugar
Adds sweetness and balances the tartness of the lemon and sherry.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Simmering the moss for 1 hour. The moss must cook long enough for its gums to dissolve and thicken the liquid. Too short a simmer leaves the jelly weak, while stirring vigorously can break the moss apart and cloud the result.
