To Salt Pork
Ingredients
Directions
Let the pork get thoroughly cold and hard.
In a boiler, add enough water to cover the pork.
Bring the water to a boil and mix in coarse sea salt.
To check for sufficient salt, drop in an egg; if it floats, there is enough salt.
Pour the brine into a jar and let it cool.
Once cool, pour the brine over the pork.
