Potato Souffle

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Select medium-sized potatoes and cut off each end.

  3. Bake the potatoes until tender, then scoop out the insides without breaking the skins.

  4. Mix the scooped potato with butter, coarse sea salt, and enough hot milk to make it soft.

  5. Beat the mixture until very light and smooth.

  6. Fill the potato skins with the mixture and place them upright in a buttered pan.

  7. Bake until browned on top. Serve warm.
