Ingredients

Directions

Prepare the asparagus

  1. Scrape the asparagus clean, then wash it in cold water.

  2. Tie the asparagus in bundles with heads facing the same way.

  3. Cut the stalks to about 7-8 inches in length.

Cook and assemble

  1. Boil the asparagus in hot water with salt for about 25 minutes.

  2. Drain carefully on a napkin to avoid breaking the heads.

  3. Place the asparagus on a square piece of toasted bread.

  4. In a saucepan, melt the butter with seasoning and nutmeg.

  5. Boil the butter until it turns light golden brown, being careful not to burn it.

  6. Pour the browned butter over the asparagus.

  7. Serve hot.

What each ingredient does

Asparagus
Forms the main body of the dish, cooked until tender while its heads stay intact.
Butter
Browning it creates nutty, toasty flavour that coats the asparagus and adds richness.

The step that matters

Boil the butter until light golden brown. Butter contains milk solids that brown quickly near the end of cooking. Heat that is too high or left unattended turns them dark and bitter, so the butter must be watched closely and removed once it reaches a light golden colour.

Swap the asparagus

How well each one fits the dish's main ingredients (butter, nutmeg):

  1. Shallotfits better
  2. Potatofits better
  3. Leekfits better
  4. Asparagusthe original

Fit is the average pairing score against butter, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
