Roast Ptarmigan and Herb Sauce

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and roast

  1. Preheat the oven to 400°F (200°C).

  2. Wrap the ptarmigan in buttered paper and place them in a baking dish with the gravy.

  3. Bake for 25 minutes, removing the paper a few minutes before done to brown the breasts.

Make the herb sauce

  1. In a saucepan, combine the parsley, onions, 2 ounces of butter, seasoning, and nutmeg.

  2. Fry gently for 5 minutes, stirring occasionally.

  3. Add the stock and simmer for 20 minutes.

Serve

  1. Serve the ptarmigan on a hot dish with the roasting gravy and the herb sauce on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ptarmigan
The main protein, cooked whole and kept moist by the wrapping and gravy.
Butter
Adds richness and moisture, and helps the sauce become smooth and rounded.
Onions
Softened by gentle frying, they add sweetness and savoury depth to the sauce.
Good stock
Forms the liquid base of the herb sauce and carries its flavour as it simmers.
Parsley
Contributes fresh, green herbal aroma to the sauce.

The step that matters

Removing the paper before the birds are done. Removing the buttered paper a few minutes before the end lets the breasts brown and crisp. Leaving it on to the end keeps the meat moist but leaves the skin pale, so timing the removal balances moisture against browning.

Swap the onion

How well each one fits the dish's main ingredients (butter, parsley, sauce, nutmeg):
