Baked Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the oysters in strong salt and water, then remove them and dry as much as possible.

  2. Preheat the oven to 350°F (175°C).

  3. Butter two shallow dishes.

Layer and bake

  1. Layer crushed crackers in the bottom of each dish.

  2. Add a layer of oysters, then dot with butter and sprinkle with pepper.

  3. Repeat the layers until all ingredients are used, finishing with a layer of crackers.

  4. Pour the oyster water over the top just before placing in the oven.

  5. If using wine, reduce the amount of oyster water accordingly.

  6. Bake until heated through and golden on top.

What each ingredient does

Oysters
Provide the main filling and the briny flavour that defines the dish.
Crackers
Form crumbly layers that soak up juices and add body to the filling.
Butter
Adds richness and fat, and helps the top brown during baking.
Oyster water
Adds moisture and concentrated oyster flavour as the dish bakes.

The step that matters

Drying the oysters before layering. Excess surface water dilutes the seasoning and makes the crackers soggy, so drying the oysters as much as possible keeps the layers distinct and the flavour concentrated.
