Baked Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the oysters in strong salt water and remove them carefully, keeping them as dry as possible.

  2. Butter two shallow baking dishes.

Assemble

  1. Layer crushed crackers in the bottom of the dishes, followed by a layer of oysters, butter, and pepper.

  2. Repeat the layers until all ingredients are used, finishing with a layer of crackers on top.

  3. Pour the oyster water over the layers just before placing the dishes in the oven.

  4. If using wine, reduce the amount of oyster water accordingly.

Bake

  1. Bake in a 350°F (175°C) oven until heated through.

What each ingredient does

Oysters
Form the main filling and provide the briny, savory flavor of the dish.
Crackers
Crushed crackers form layers that absorb liquid and give the dish body.
Butter
Adds richness and fat that carries flavor and helps the top brown lightly.
Oyster water
Adds moisture and concentrated oyster flavor as the layers heat through.

The step that matters

Keeping the oysters as dry as possible. Excess water from washing dilutes the flavor and makes the crackers soggy, so the layers can turn loose instead of holding together. Dry oysters keep the dish richer and better textured.
