To Preserve Peaches

Ingredients

Directions

Prepare the peaches

  1. Peel and weigh your peaches.

  2. Add an equal weight of sifted white sugar to the peaches and let them stand overnight.

Make the syrup

  1. Pour off the syrup and boil it, skimming well.

  2. Add the peaches to the boiling syrup and cook slowly until they are clear.

  3. Remove the peaches and place them separately on a dish to drain.

  4. If the syrup is thick, let it cool; if not, add a little sugar and boil again.

  5. Set the syrup aside until the next day.

  6. For added flavor, boil a few peach leaves or pits in the syrup.

Pack and store

  1. Pack the peaches into small jars or tumblers and cover with brandy paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit that is cooked and preserved in the syrup.
Sifted white sugar
Sweetens the fruit and draws out syrup, helping preserve it.

The step that matters

Cooking the peaches until clear. Cooking slowly keeps the fruit intact while sugar syrup gradually replaces its water. Boiling hard can break the peaches apart and leave the syrup cloudy.

Swap the peach

The recipe marks peach as optional. How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Peachthe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
