Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Set the custard into a firm, smooth body through protein coagulation.
Sugar
Forms the caramel coating and adds sweetness and deep colour.
Cream
Adds fat for a rich, smooth, tender texture.
Rye whisky
Adds a distinct aroma and flavour that carries through the custard.
Lemon rind
Adds bright citrus aroma that balances the richness of the cream.

The step that matters

Add the egg yolks only to the cooled mixture. If the cream is still very hot, the egg proteins in the yolks can scramble instead of blending smoothly. Cooling the mixture first keeps the custard silky and evenly set when steamed.
