Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stewed apples
Provide the bulk and fruity flavor of the filling.
Gelatin
Sets the apple mixture so it holds its shape when unmolded.
Egg whites
Whipped into the filling to make it light and airy.
Sugar
Sweetens the apple filling and balances the lemon's acidity.
Lemon juice
Adds acidity that brightens the sweet apple flavor.

The step that matters

Folding in the egg whites at the right moment. Fold the egg whites in only when the mixture begins to stiffen. If the gelatin is still liquid, the whites will deflate and the filling will not hold its airy texture once set.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, gelatin, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, lemon, gelatin, egg. Candidates are from the same food group and used in at least 100 recipes.
