Lemon Sheebet

Ingredients

Directions

Make the lemonade

  1. Make a thick syrup by combining 1 pint of sugar with 1 pint of water; heat until dissolved.

  2. Let the syrup cool, then mix in the juice of 6 lemons and enough water to create a rich lemonade.

Make the icing

  1. When the lemonade is half frozen, prepare the boiled icing.

  2. For the icing, moisten 1 pint of sugar with water and boil until it reaches a soft candy stage.

  3. While the icing is hot, add the stiffly beaten egg whites and mix well.

  4. Flavor the icing with vanilla and a little citric acid or cream of tartar, then beat until thick and smooth.

Combine

  1. Fold the icing into the half-frozen lemonade.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into the hot sugar icing to add airy structure and a light, smooth body.
Sugar
Sweetens the lemonade and, boiled into icing, helps give the sherbet its body.
Lemons
Supply the juice that provides the bright, tart flavor and acidity.
Citric acid or cream of tartar
Adds acidity and stabilizes the whipped egg white foam in the icing.

The step that matters

Boil the icing to soft candy stage. Sugar cooked to the soft candy stage sets a firm but tender base that holds the whipped egg whites and keeps the frozen dessert smooth rather than grainy or icy.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, vanilla, cream):
