Why it works: Syrup and gelatin match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 192 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness through their proteins setting as they are gently heated.
Gelatin
Sets the cream into a firm, sliceable texture as it chills.
Whipped cream
Adds air and fat, giving the set cream a light, smooth texture.
Preserved ginger
Provides the main aroma and a warm, spicy flavour throughout the cream.

The step that matters

Fold in the whipped cream gently. Vigorous stirring knocks out the air bubbles in the whipped cream, leaving a dense texture instead of a light one. Fold slowly so the cream stays aerated and blends evenly.

Swap the ginger

How well each one fits the dish's main ingredients (milk, sugar, egg, syrup, gelatin, cream):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Peppermintfits less well

Fit is the average pairing score against milk, sugar, egg, syrup, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
