What each ingredient does

Elderberries
Provide the main fruity flavor and deep color of the ketchup.
Vinegar
Extracts flavor from the elderberries and adds sharp acidity that preserves the ketchup.
Shallots
Add a mild, savory onion-like flavor to the boiled liquid.
Anchovies
Dissolve into the liquid to add deep savory saltiness, or umami, to the ketchup.

The step that matters

Boil until dissolved. The anchovies must fully break down into the hot liquid. Undissolved pieces leave a gritty texture and uneven flavor, so boiling until they disappear makes the ketchup smooth and evenly seasoned.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, clove, shallot):

  1. Tarragonfits better
  2. Allspicefits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against vinegar, clove, shallot. Candidates are from the same food group and used in at least 100 recipes.
