Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish; their starch browns and crisps in hot fat.
Drippings
Provide the frying fat that conducts heat and gives the potatoes browning and flavor.

The step that matters

Cook until the potatoes are brown, then turn and brown the other side.. Browning depends on enough heat and fat contact. Turning too early, before a golden crust forms, causes the slices to stick and steam instead of crisping.

Swap the potato

How well each one fits the dish's main ingredients (pepper, ham):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cabbagefits better
  4. Potatothe original

Fit is the average pairing score against pepper, ham. Candidates are from the same food group and used in at least 100 recipes.
