Why it works: Gelatin and syrup match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 192 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Peaches
Provide fruit flavor and pieces suspended in the set jelly.
Sugar
Sweetens the syrup and balances the lemon's tartness.
Lemon
Adds acidity and aroma that brighten the sweet peach flavor.

The step that matters

Dissolve the gelatin until soft before boiling. Gelatin must hydrate fully in cold water before heating, otherwise it clumps and sets unevenly. Boiling the mixture ensures the gelatin dissolves completely so the jelly sets smooth and firm.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, peach, syrup, sugar):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against gelatin, peach, syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
