What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Heavy cream
Adds richness and a light, airy texture when whipped and folded in.
Sugar
Sweetens the peaches and draws out their juice as it stands.
Peach halves
Provide the fruit flavour and aroma that carries the dessert.

The step that matters

Stir the whipped cream into the gelatine mixture, one spoonful at a time.. Gelatine begins setting as it cools, so adding cream too quickly or when the mixture is too cold can cause lumps and uneven texture. Gradual addition, with the gelatine only just thickened, helps the cream blend in evenly and keeps the mousse-like airiness.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
