What each ingredient does

Indian meal
Cornmeal that thickens the water into a soft, porridge-like gruel as it cooks.
Milk
Adds creaminess and softens the texture, adjusting the gruel to the desired consistency.
Butter
Adds richness and fat for a smoother mouthfeel and extra flavor.

The step that matters

Stirring during the first boil. Cornmeal settles and sticks to the bottom of the pan as it thickens, so it can scorch. Stirring keeps the starch suspended and evenly heated, preventing a burnt taste.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, wine, butter):

  1. Cinnamonfits better
