Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 400°F (200°C).

  2. Sprinkle a little coarse sea salt on the beef.

Roast

  1. Place the bony side of the beef towards the fire.

  2. Once the ribs are heated through, turn the meat.

  3. Baste frequently until done.

  4. Roast for 15 minutes per pound for thick cuts; less time for thin cuts.

What each ingredient does

Beef
The main cut; its fat and juices help keep the meat moist and flavorful as it roasts.
