Chocolate Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the egg yolks, 1 egg, sugar, milk, corn starch, flour, butter, cream of tartar, baking soda, and nutmeg until smooth.

  3. Fold in the beaten egg whites gently.

Bake and top

  1. Pour the batter into a greased cake pan and bake until a toothpick comes out clean.

  2. While the cake is hot, spread one-third of the remaining sugar on top.

  3. Mix the rest of the sugar with the chocolate and spread it over the cake.

What each ingredient does

Eggs
Egg yolks and whites add structure, richness and lift to the crumb as they set.
Flour
Provides the starch and protein that form the cake's structure as it bakes.
Sugar
Adds sweetness, keeps the crumb moist, and helps the top brown.
Butter
Adds fat that tenderizes the crumb and gives a richer flavor.
Baking soda
Reacts with the acid in the batter to produce gas that helps the cake rise.
Corn starch
Softens the flour's gluten, giving a finer, more tender crumb.

The step that matters

Fold in the beaten egg whites gently. The whites hold air that gives the cake its rise. Vigorous stirring knocks that air out, leaving a dense, flat cake.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, milk, corn, flour, butter, cream):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Jalapenofits less well
  4. Tarragonfits less well

Fit is the average pairing score against egg, sugar, milk, corn, flour, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
