What each ingredient does

Cucumbers
Provide the crisp, firm bite that remains after brining and pickling.
Cauliflower
Adds bulk and a firm texture that holds up in the vinegar.
White cabbage
Adds crunch and bulk, absorbing brine and vinegar flavor.
Onions
Add sweetness and aroma that mellow during brining and pickling.
Black mustard seed
Adds sharp, pungent heat and flavor to the pickling liquid.
Green tomatoes
Add tartness and body, holding their shape in the vinegar.

The step that matters

Draining after the brine and before the vinegar. Draining removes excess salt and water from the vegetables, so the vinegar can pickle them without becoming diluted or overly salty.
