Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Combine scalded milk and bread crumbs in a bowl.

  3. Add beaten egg yolks, sugar, butter, and grated lemon rind; mix well.

Bake and top

  1. Pour the mixture into a baking dish and bake until set.

  2. In a separate bowl, beat egg whites until stiff, then gradually add powdered sugar and lemon juice.

  3. Spread the egg white mixture over the pudding and return to the oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the scalded milk to form the soft body of the pudding.
Egg yolks
Enrich the custard and help it set when baked.
Egg whites
Whipped into a stiff foam that bakes into a light, golden topping.
Sugar
Sweetens the pudding and helps the topping brown.
Butter
Adds richness and a tender texture to the pudding.

The step that matters

Beating the egg whites until stiff. Egg whites must form a stable foam before the powdered sugar and lemon juice are added. Under-beaten whites collapse in the oven, while over-beaten whites turn dry and grainy, so the topping will not bake up light and golden.

Swap the lemon

How well each one fits the dish's main ingredients (milk, bread, egg, sugar, butter):
