What each ingredient does

Beef
Provides the meaty base and bulk of the filling once cooked and chopped.
Suet
Adds fat that keeps the filling moist and rich as it matures.
Apples
Contribute moisture, tartness and body to the filling.
Currants
Add concentrated sweetness and chewy texture.
Raisins
Add sweetness and chewy texture.
Sugar
Adds sweetness and helps preserve the filling.

The step that matters

Pour in boiled cider, brandy, and wine until the mixture is soft. Liquid must be added gradually so the filling becomes moist and spreadable without becoming runny. Alcohol and sugar also act as preservatives, so the balance matters for safe keeping in the jars.

Swap the currant
