Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and richness as they set during baking.
Flour
Forms the gluten network that gives the cake its body.
Baking powder
Releases gas in the batter so the cake rises and becomes light.
Sweet cream
Adds moisture and fat for a tender crumb.
White sugar
Sweetens the batter and helps brown the crust.

The step that matters

Gradually add the flour mixture to the egg and cream mixture.. Adding the dry mixture gradually helps it blend evenly without lumps. Mixing too vigorously once flour is in can overdevelop gluten, making the cake tough.
