Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the fat pork into thin slices, about the size of the oysters.

  2. Lay the pork pieces in a sheet-iron dripping pan.

  3. Place an oyster on each piece of pork, previously drained.

  4. Dust with white pepper and cover with another piece of thin pork.

  5. Bake in a hot oven at 400°F (200°C) until the pork is crisp and light brown.

  6. Remove to a hot dish and serve immediately with sliced lemons.
