Lobster Scalloped in Shells

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. Melt butter and stir in flour to make a white roux.

  2. Stir hot stock and scalded milk into roux, season with salt and paprika, and bring to a boil.

  3. Remove from heat, then add egg yolks, lobster dice, parsley, and lemon juice.

Fill and bake

  1. Fill cleaned lobster shells with mixture.

  2. Cover with fine breadcrumbs, dot with butter, sprinkle with cayenne, and bake at 400°F (200°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster meat
Provides the main flavour and the bulk of the filling.
Butter
Enriches the roux and adds richness and flavour to the sauce and topping.
Flour
Thickens the stock and milk into a smooth white sauce.
Egg yolks
Thicken the sauce when gently heated and add richness.
Milk
Adds body and creaminess to the sauce.

The step that matters

Adding the egg yolks off the heat. Egg yolks can scramble and turn grainy if the sauce is too hot. Removing the pan from the heat before adding them lets them thicken the sauce gently and smoothly.
