Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Goose

Ingredients

Directions

Prepare the goose

  1. Prepare the goose by drawing, cleaning, singeing, and trussing it like a turkey.

  2. Stuff the goose with onion and a pinch of sage.

  3. Place the goose on a roasting rack and pour 1 cup of boiling water over it to seal the skin and retain juices.

  4. Wash the goose with butter, pepper, and coarse sea salt.

  5. Dredge the goose with flour and brown it.

Roast

  1. Roast covered for 20 minutes per pound if the goose is of reasonable age; if not, cook slowly, basting often with the drippings for at least 30 minutes per stubborn pound.

Make the gravy and serve

  1. Drain and skim the fat from the gravy before seasoning the goose.

  2. Thicken the gravy with browned flour.

  3. Add finely minced giblets to the gravy.

  4. Bring the gravy to a boil.

  5. Serve the goose with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat, whose fat renders during roasting to moisten and crisp the skin.
Flour
Browns on the skin and thickens the gravy as it cooks in the drippings.
Butter
Adds fat that helps the skin brown and gives a rich flavor.
Giblets
Add concentrated meaty flavor to the gravy.

The step that matters

Roast covered for 20 minutes per pound if the goose is of reasonable age; if not, cook slowly, basting often. Goose is fatty and older birds are tougher, so slow cooking with frequent basting lets fat render and connective tissue soften while keeping the meat moist. Skipping this adjustment can leave meat tough or greasy.

Swap the onion

How well each one fits the dish's main ingredients (sage, butter, pepper, flour):

  1. Shallotfits better
  2. Parsnipfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against sage, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
