Broiled Squirrels

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Skin, draw, wash, and soak the squirrels in salted water for 10 minutes.

  2. Rinse in cold water, wipe dry, and broil over a clear, steady fire until well done.

  3. Sprinkle with salt and pepper.

  4. Place on a hot dish and pour over a little melted butter.

  5. Cover closely and set in the oven at 400°F (200°C) for a few minutes.

  6. Serve immediately.
