What each ingredient does

Sweet cream
Adds richness and body, giving the sauce a smooth, creamy texture.
Butter
Adds fat for a silky mouthfeel and rich flavor when stirred in off the heat.
Strained gravy from the dripping-pan
Contributes concentrated savory flavor from the cooking juices.

The step that matters

Bring to a boil, then remove from heat and add butter. Boiling cream can break or scorch and the sauce may thicken unevenly. Removing it from heat before adding butter helps the fat emulsify smoothly into a glossy sauce.

Swap the parsley

How well each one fits the dish's main ingredients (cream, butter):

  1. Nutmegfits better
  2. Tarragonfits about as well
  3. Macefits about as well
  4. Parsleythe original

Fit is the average pairing score against cream, butter. Candidates are from the same food group and used in at least 100 recipes.
