Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, tender jelly as it cools.
Egg whites
Bind to impurities as they heat, so straining through the cloth leaves the jelly clear.
Sugar
Adds sweetness and helps give the jelly its body.
Lemon
Adds acidity and bright aroma from the rind and juice.
Brandy
Adds alcoholic aroma and flavor, added after cooking so it is not boiled off.

The step that matters

Straining through the cloth until clear. Egg whites trap cloudy particles as the mixture heats and forms a crust. Straining through a clean, scalded cloth removes them, so the jelly stays clear. Rushing this step leaves the jelly cloudy.
