Raspberry Jelly with Cream Ice

Ingredients

Directions

  1. In a saucepan, combine the sugar, cold water, and lemon rind. Bring to a boil, then simmer for 10 minutes.

  2. Stew until all the juice is extracted, then strain through a fine sieve.

  3. Measure the juice and reheat, dissolving in the gelatine. Taste and add more sugar if needed, then strain into a basin.

  4. If desired, add the sherry when the jelly is cool and pour into a mold to set.

  5. In a double boiler, combine the milk, sugar, and lemon rind. Stir until the sugar dissolves, then let cool.

  6. Whip the cream and stir it into the cooled milk mixture, then freeze.

  7. Serve the cream ice alongside the raspberry jelly.
