What each ingredient does

Beef and suet
Provide richness and body, as the fat melts and carries flavor through the mince.
Apples
Add moisture and tartness that balance the sweetness of the sugar and molasses.
Sugar
Adds sweetness and helps preserve the mixture during long standing.
Molasses
Contributes deep sweetness, color, and a rich caramel-like flavor.
Brandy
Adds alcohol that preserves the mixture and carries aromatic flavor.
Raisins
Add concentrated sweetness and chewy texture.

The step that matters

Let the mixture stand to ripen. Resting for several days lets the spices, alcohol, and fruit flavors blend and mellow, and the alcohol and sugar help keep the mixture stable. Using it too early gives harsh, unbalanced flavors.

Swap the raisin

How well each one fits the dish's main ingredients (apple, orange, lemon, cinnamon, allspice, clove, beef):

  1. Cranberryfits better
  2. Limefits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against apple, orange, lemon, cinnamon, allspice, clove, beef. Candidates are from the same food group and used in at least 100 recipes.
