What each ingredient does

Rice
Absorbs milk as it soaks and cooks, giving the pudding its body and chewy texture.
Milk
Forms the liquid base that the rice cooks in and the custard sets from.
Egg yolks
Thicken and set the custard, adding richness and a smooth, creamy texture.
Sugar
Adds sweetness and helps soften the set texture of the custard.
Butter
Adds fat for a richer mouthfeel and a smoother, silkier custard.
Egg whites
Whipped into a meringue topping that adds light, sweet contrast on top.

The step that matters

Bake until the pudding is set, but do not allow it to whey.. Egg proteins set as they heat, but overbaking tightens them too much and squeezes out liquid, causing whey to separate. Stop once the pudding is just firm.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, egg, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
