What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body.
Egg yolks
Enrich and thicken the custard, adding richness and smoothness.
Milk
Forms the liquid base that the tapioca thickens into a pudding.
Sugar
Sweetens the pudding and balances the tartness of the fruit.
Peaches
Add fruit flavour and aroma to the finished pudding.

The step that matters

Adding the beaten yolks to the hot mixture. Egg yolks can curdle or scramble if they meet very hot liquid too quickly. Cooking them gently while stirring keeps the custard smooth and lets it thicken evenly.
