Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Cream
Adds richness and a smooth, velvety texture with fat.
White wine
Contributes liquid and a light fruity flavour to the set cream.
Lemon juice
Adds acidity that brightens the flavour and balances the richness.

The step that matters

Stir until completely cold before moulding. Gelatine sets only as the mixture cools. Stirring the cream in until fully cold lets the gelatine begin to thicken evenly, so the cream stays suspended instead of separating, and the mould sets firm rather than loose.

Swap the lemon

How well each one fits the dish's main ingredients (white wine, sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against white wine, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
