Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce that coats the lobster.
Flour
Thickens the milk into a smooth, creamy sauce when heated.
Lobster or crab
Provides the main seafood flavor and tender, meaty texture.
Bread crumbs
Form a crisp, browned topping in the oven.

The step that matters

Adding the flour mixture to the boiling milk. Flour clumps if it hits hot liquid unmixed. Mixing it smooth with cold milk first and stirring it in slowly lets the starch disperse and thicken the sauce evenly.

Swap the onion

How well each one fits the dish's main ingredients (milk, flour, pepper, parsley, lobster, bread):

  1. Shallotfits better
  2. Carrotfits better
  3. Capsicumfits better
  4. Onionthe original
