Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavor and texture of the soup.
Flour
Thickens the butter and soup into a smoother, heavier body as a roux.
Eggs
Set into the hot soup, adding richness and body when stirred in.
Butter
Carries flavor and helps form the roux with the flour.

The step that matters

Adding the beaten eggs. Eggs can curdle and turn grainy if the soup is boiling hot or stirred vigorously when they go in. Pouring them into the tureen just before serving, off the heat, lets them thicken gently and stay smooth.

Swap the onion

How well each one fits the dish's main ingredients (clam, butter, flour, egg, milk):

  2. Shallotfits better
