Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the main body and tart flavor of the preserve.
Sugar
Draws moisture out of the rhubarb and thickens the syrup, while preserving the fruit.
Vinegar
Adds acidity that brightens the sweet syrup and helps balance its sweetness.
Whole cloves
Infuse warm, aromatic spice into the syrup.

The step that matters

Boil the syrup until it thickens. Boiling concentrates the sugar syrup so it sets properly and keeps the rhubarb preserved. Stopping too early leaves a thin syrup that spoils more readily, while overcooking can make the syrup too stiff.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, syrup, vinegar, clove, ginger, cinnamon):

  1. Allspicefits better
  2. Cardamomfits better
  3. Nutmegfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, syrup, vinegar, clove, ginger, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
