Why it works: Lobster and cream are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 1,050 recipes. Both carry 1-octen-3-one, which smells mushroom, metallic. The science ↓
Lobster Cutlets
Ingredients
Directions
Place the lobster on a cutting board.
Use a chopper to break the shell by hitting it with the blade, not the edge.
Remove all the flesh from the lobster and cut it into small dice-sized pieces.
If it's a hen lobster, extract the coral from the neck and back.
Wash the coral in cold water in a small basin.
In a mortar, combine the coral with 2 oz. of butter and pound well.
Scrape the mortar clean with a palette knife or raw potato.
Pass the pounded mixture through a hair sieve into a plate.
Scrape any remaining mixture from the sieve with a spoon.
