What each ingredient does

Brussels sprouts
The main vegetable; boiling softens its dense leaves until tender.
Butter
Adds fat and richness, coating the sprouts as they are tossed.
Carbonate of soda
Raises the water's alkalinity, helping the sprouts keep a bright green color.

The step that matters

Boiling the sprouts. Boiling uncovered in plenty of water and timing by the sprouts' age matters: overcooking turns them soft and grey-green, while undercooking leaves them dense and bitter.
